Vegan Microwave Chocolate Mug Cake

This delicious little treat is the easiest and fastest way to make dessert for one or two onboard. This recipe does not use eggs and because I am gluten free, I use banana, coconut or almond flour instead of regular. The ingredients are easily kept on board and you can substitute with long-life milk for example instead of fresh if you don't have supplies. I like to use soy or a nut milk.



Ingredients:

  • 1/4 tsp Baking powder

  • 3 tbsp banana flour

  • 1 tbsp Cocoa powder, unsweetened

  • 2 tbsp Granulated sugar (I use honey)

  • 1 dash Salt

  • 1/8 tsp Vanilla extract

  • 1 tbsp coconut oil (or you can use canola)

  • 3 tbsp Milk

How to make your Mug Cake

Add dry ingredients to a mug: flour, sugar, cocoa powder, baking powder, and salt.

Add wet ingredients: milk, canola oil, and vanilla extract. Stir until smooth.

Stir in chocolate chips or other

Cook in microwave for 90 seconds



Want to make a healthier mug cake?

  • Sugar: Cut the amount in half, substitute an artificial sugar sweetener or honey.

  • Oil: replace with applesauce

You can also add these...

Small scoop of nutella

Small scoop of peanut butter

Coconut

Nuts

Cinnamon

Flavored chocolate chips (peanut butter, mint, butterscotch)



Now sit back, relax and enjoy a little sweet treat with your afternoon tea too!
